Jaggery
Jaggery (known as gur in Hindi, vellam in Tamil, bella in Kannada) is a traditional, unrefined sweetener made primarily from sugarcane juice or palm sap. It’s boiled down and solidified into blocks, granules, or pastes without separating the molasses, which gives it a deep golden to dark brown color and a rich, earthy flavor.
Unlike refined white sugar, jaggery retains natural minerals and trace vitamins, making it a nutritive sweetener rather than just empty calories.
